The Most Useless Theory Ever
Ok, so I was playing on my pally the other day, and I just so happened to be in a group full of other pallies. As I looked at their health bar, I noticed something very similar about them, they all ended in 7.
So I wondered, does every class/race combo have the same end number there? I asked around, and came to a conclusion, that they more than likely do, however, there are a few exceptions:
Tauren - 5% health increase, since this does not come from stam, it is not multiplied by 10, so that end number can vary between them.
Demonology Warlocks - They get a 3% health increase.
Survival Hunters - They get a 10% health increase.
Note that any stam increases do not matter, it doesnt matter if you have 10 stam or 10000 stam, because that number is multiplied by 10 when the game figures your health, and since every character who is the same class and race ass naked and talentless is exactly the same, their default health is the same.
What do ya'll think, I know its a completely useless thought, but hey, it's kinda interesting, to me anyway

Any race/class combination is going to have the same base HP, I think. All night elf warriors will have HP ending in the same number, just like all blood elf paladins or tauren druids. If you look at any of the human paladin sigs here, their health all ends in a 7 as well.

On another note, stamina #'s get very confusing.
If i un-equip my 40stam necklace i loose 11.75 health per stam.
Does anyone know why this is. Depending on gear slots similar amounts of stamina = way different amounts of health. I was doing this to compare health: stamina ratios between me and a better geared warrior.
I have some of the #'s written down somewhere at home, but i remember equiping 101 stam ontop of my engineering helm and getting something like 6607 health, and than equipping 112 stam with my engi helm and getting 7007.
I'll write down the exact #'s sometime today...

It's 'cause we get "more bang for the buck" on +sta items due to Combat Expertise. You'll get the same effect from a +79sta PW:F. Instead of 790 health, you'll see as many as 870 more HP.

I accounted for that in my math.
It does not explain why 101 stam = 400 health less than 112 stam. 11 stam can not = 400 health. I was naked, and unbuffed. I'm merely asking why the #'s just don't make any sense when swapping gear. 11 stam should not ever account for 400 health.
-----Something I just realized was that possibly my timewarden's leggings had enough gems to add the +18 stam from my meta, doubting that b/c there are only 3 gems in the pants but possible).
