Unfortunately I was only there for a day or two, and my memory of it is a bit hazy without the aid of a photo album atm, but I'd say take the sightseeing bus tour as soon as you get into town so you can map out where you want to go/what you want to do. Gives you an idea of the layout of the city which will be really helpful for doing the tourist stuff.
I never went into the castle, although my family, on a later trip, said they weren't that impressed with it. (I'd probably still do it when I go again.) Also if you're up for trekking - go up to Arthur's Seat - the views are amazing from up there.
And no matter how squeamish you may or may not be, at least give haggis a shot.

last time we raided we decided to switch to HoF after spirit kings, 7 pulls (3 or 4 with only 9 ppl) and we got him to P3 and about 13%
so if we continue next week, we should get will and the first 1 or 2 in HoF down

It's not particularly "Scottish" but I enjoyed the Camera Obscura both times that I went to Edinburgh.
Edit: If nothing else, the view from the top of the building makes for some pretty good pictures.

Our first night on Terrace 10 man normal and in 2.5 hours we cleared the 1st 3 bosses and was able to do 3 pulls on Sha. Though that fight feels a lot harder then the 1st 3 did.

Sha is much easier than it seembs, and it's so flat and repetitive that it gets boring.
