Questions about hitting stuff
Is it worth it to gear for 15% expertise (and 7.5% hit) or should we stick to 7.5%?
At what point should we start using Hammer of the Righteous over Crusader Strike (to maximize threat/dps)?
At how many targets should we switch seals (to maximize threat/dps)?

Yes, 15% Expertise, 7.5% Hit. See Theck's blog.
Use HotR on two targets so you don't lose them. It's trash so you don't care that much.
You should roll SoTruth all the time. Again, who cares about trash. On Stone Guard keep SoT on both your targets.

No, if anything you should use Seal of Insight all the time, its amazing, and SoT barely stands for any dps, rather have half a healer more.

yep SOI is the MOP tanking seal. more threat, more heals. Minimal DPS loss. love it.

For fun I ran with Seal of Truth on stone guard LFR, kept the stacks up on all 3 targets at all times.
Running that seal gave me almost another 1million damage (700k from dot, 300k from hits), in a fight where i did 25million damage, fight was around 5min or smth.

How much damage did SoI provide you in older fights (for comparison's sake)?

SoI never provided damage.
But SoT was the only really viable option before, due to SoI beeing pretty bad healing, that got buffed in 5.0 and in MoP the glyph is what makes that seal.
SoT stood for quite a bit of damage both pre 5.0 and after, i think around 15% of our damage was usually from the seal, more with more targets to roll it on, I remember many add fights where censure dot was my highest damage dealing ability.
Currently SoT would do about 3-4k dps, or you choose SoI for a lot of healing (I think someone said 17k hps or smth, but its hard to quantify cause its not steady due to abilities hits for different ammounts, but it prefers to heal low hp players)

For some reason, I had it in my head that SoI also did damage, but I'm not sure what I was thinking there.
