one character can get level boosted to 80.
Optionally the level boosted character can realm/faction transfer to the sender's realm/faction. I believe they do not need to do both.

I'm thinking of using this, does who's played Cata know which of the tanking classes is the most fun to play ATM? Can DeathKnight's still tank with 3 different specs? That would add a bit more variety! Seems a waste to boost a paladin from 80 to 80!

No, with Cataclysm they restricted DK tanking to Blood tree only.

Currently, you'll find tanking completely turned inside out. Threat is irrelevant (mostly), your attacks generate ressources for your defenses. Ferals and Worgen sleeping togheter. Craaaaaazy.
The good news is that every tank just got thrown in the mixer as well, so if you jump in, you won't be that much out of the loop as compared to other players.

Is there any one tanking class which has something the others lack? I'm thinking like spell reflection for warriors, the old Ardent defender or aura mastery for paladins, stupidly high armour for druids from times gone by. Seems a waste not to level something to 80 with the freebie, even if I go back to paladin afterwards! Is there a raid buff which one class brings which is otherwise often lacking?

Should probably wait until the dust settles a bit with 5.0 hitting to determine the "big" differences between tanks. As for lacking buffs, that will likely get all sorts of shaken up as people drop their main to create a monk, then half of those going back to their main because they can't handle a monk or decide they don't like it.
However, if you're looking for something different from a Paladin, I'd say Druid or DK. Sure Warriors have their differences too, but they're another shield class.
Druid gives the added benefit of being able to cover all 4 roles (tank, mdps, rdps, heals) should you decide you don't care for bears.
