Covers: the sincerest form of musical flattery
...although covers piss many people off, which I find to be delicious.
Here's a Google Doc with all the covers on my hard drive, and a couple more that I found or though of:

I love a lot of covers, sometimes they are horrible, sometimes they are better. My favorites are acoustic covers.

I definitely missed some. I have confess that I didn't even know Knockin' on Heaven's Door was a cover. The Guns N' Roses version is too ubiquitous :/

In all seriousness, though, I actually like most covers, the best usually come when a band covers something outside of their 'dominant' genre.

Funnily enough, I think ring of fire was originally a June Carter song that Cash covered and made popular.

I've always liked Me First and the Gimme Gimmes. Four or five members from assorted punk bands got together to just play covers.

Not exactly the same style as most of the others already mentioned, but Pomplamoose have done a lot of great covers and pretty much everything from the triple j like a version series is worth a listen, especially when they improvise on instruments. Some of my favourites:
