It emphasizes the - huge, IMO - quality difference between night elf (vanilla) and blood elf (TBC) models, as well as between vanilla character models and the lastest, much more "high-definition" NPC models (even if they're just based on older player models)

Ysera's humanoid form is clearly a Night Elf, Blizzard is just using the Blood Elf skeleton for her because as people have pointed out, the Classic races look dated now.
