Here's my typical makeup:
MT on High King with 3 dedicated healers, preferedly not all of the same class.
2 hunters tanking Shammy with 1 healer.
1 DPS/OT tanking Priest with 1 healer.
2 warlocks and 2 DPS/OTs (warrior/druid prefered for charge) tanking Warlock/Felpuppies with 1 healer.
1 mage tanking the Mage with 1 dedicated healer.
Any healer not listed as "dedicated" has the secondary task of healing the raid (and will be doing so as their tanks' ads die as well).
Total Required:
Healers: 7
Prot Spec Tanks: 1
DPS/OT Spec Tanks: 3
Hunters: 2
Warlocks: 2
Mages: 1
You'll also need an interrupt or two (warrior/rogue/enhncmnt shammy) for the healer. Burn thru his shield and interrupt his heal. You can use more than one prot spec for the off-tanking, but you don't need to.
Kill order:
Priest
then
Warlock
then
Ranged kill mage
Melee kill hunter
then
King
then LOOT!

They get hit by it, but its nothing that can't be handled. My guild has no raiding moonkins, and our hunters have difficulty getting aggro on top of misdirecting, so we usually have a bear tanking it. It gets a little dicey when DPS actually starts in on him, but hes tauntable and everything, so meh
