To be honest, why would you travel with a bindlestiff when you find out his real activities?
My trouble came when my PC would have really no way to notice such screwing. "Hey, have you seen my ____?" is about the only symptom. He was observant, but my spot / sense motive / etc checks were only average, compared to the bindlestiff's (hehe) super-tricked-out sleight of hand and stealth skills, for example.
He'd to random cool-if-you're-evil things like stab our NPC friends and throw them overboard, and then claim that they fell out in the rapids, or pocket gems and the like when looting chests or bodies -- and our characters would generally never know, even if we'd been (and were) rolling perception/etc checks in protest.
Frankly, I liked that our GM gave us the latitude to do things like that. PC vs PC fighting was pretty much verboten, though, which I admit I have mixed feelings about -- it's exploitable, but also rules out the "I caught you stealing, I am now going to punch you in the face" reaction that one would expect from a warrior or barbarian. I was much more concerned with the fact that I couldn't figure out how to deal in-game with what was effectively a character tailor made for griefing, since my in-game resources for catching him (let alone suspecting him) were slim.
These days my characters aim for relatively high sense-motive and similar skills for precisely this reason.
The real takeaway is, though: don't play with griefers. If they're being dicks to you, IMO a good solution is to tell them out of game that you'd prefer them not to be jerks like that.
I always viewed most RPG characters as "murderous hobos" for their activities and traveling lifestyle!
