Does avoidance help against casters?

I know armour is useless against casters and stamina is good - does avoidance help at all? I can't imagine blocking or parrying a spell. Can you dodge one? I'm mainly thinking about heroic 5 mans.

Nope, the only way to mitigate spell damage is with resistances.

Blood DK speccing into http://www.wowhead.com/?spell=49497 gains spelldamage reduction from avoidance, though I have no idea if any tank actually specs it or not.

Funny thing about Spell Deflection, it doesn't actually work against anything that you'd want it to.

Actually, i remember that when my 10-man group was working on "glory of the ulduar raider" i specifically speced onto that talent for Firefighter. Using it in conjunction to royal seal was amazing for Plasma Blasts (and it also helped on phases 2 and 3).
At the time our setup was resto druid and double resto shaman so i couldn't count on cds on me (our Ret pally could bubble and HoS me, but we'd rather use that as da DS on phase 2). With IBF on a 1min Cd and Vampiric Blood lasting 30sec (glyphed) i could survive as many blasts as needed just alternating AMS, IBF, VB, Mark of Blood, Army of the dead and i had SPELL DEFLECTION to help with the mitigation.

No, avoidance does nothing at all against spells. Spells can miss, but that's a function of resistance not your miss percentage which is supplied by defense rating.
