Phase 1: Dps him down as quickly as possible. Stack sparks where you can, blow bloodlust/heroism as soon as you get the first spark in place. A good marker for timing is 50% at the second vortex. If you can avoid the vortex, that's okay, if you can't that's okay as well as long as you're close to 50.
Phase 2: Kill scions as fast as possible. Don't worry about keeping spark pools for faster dps. Your goal is to get through this quickly and keep everyone alive for the last phase.
Phase 3: Pile the hurt on Malygos. Don't die, generate quick combos, collect achievement.

It just consists of doing the normal fight, really well.
I wouldn't really consider double DG par for the course in most 10 man group comps.

1-1-2 leaves very little room for error, so if you think it's likely that you will screw up you should do 1-1-1-2. Also you should never have to shield, which is the #1 cause of losing your stack. With two healers and proper positioning everyone should be able to maintain 1-1-2 the whole time.
The strategy you laid out is perfect, except that everyone should be staying in the sparks until they disappear, and there will be at least one extra spark to snag at the end of p1 (which you can either grip down or just shoot before it goes out of range, and it'll drop the patch on the ground). Healers can handle it, it's not like they'll need to conserve mana.
I'm not sure what you mean by double DG (deathgrip or divine guardian?) but we only take one DK to 10-man and it works fine. If the sparks spawn on opposite sides you're probably screwed anyway.

Double death grip, and I only mentioned it because of the content of the video. They did indeed get a spark on the wrong side of Maly, so they DGed it behind him, then on top of the spark stack they already had going. This was pretty standard with the 5 minute timer, but I don't see any reason to bring 2 DKs to this fight anymore unless they're awesome dps for phase 1.

My guild got this with I think 5:59. Had a DPS die early in p2 and get Brezzed.
We ran with
Prot War
Unholy DK
Ret Pally
Resto Druid
Holy Pally
Ele Shammy
Lock
Lock
Shadow Priest
Hunter
And my guild hasn't killed sarth + 3 on 10 man yet, although my group has come close with limited attempts, I think 5 attempts and we had shadron at I think 10 percent, kinda sucks having to wait 10 mins between each one cause of heroism.

My guild knocked this out a few weeks ago.
The only thing we did differently than a normal kill was only bring one healer. We used a holy pally and brought healthstones and healthpots to survive the first vortex. It's basicly a gambling strategy that you have enough dps to hit 50% before the second vortex as you won't survive it. Bloodlust is used as soon as the first spark dies.
Our first attempt ended up being a one shot with 27 seconds left on the clock.
Now if only people would stop failing at drake dps in the 25man. We seem to be about 10-15 secs slow every time >.<
