What numbers should I be going for now?
For BC, 490 def rating was the cap.
Now, though -- especially with the whole "lose def each time you level thing" which caught me seriously by surprise, because I didn't see any of this in the Blizz documentation or on the OF -- has the cap changed? I've been able to tank UK & Nexus just fine.
Finding out NOW that I'll lose def rating as I progress has me seriously annoyed, because I've been selling most of my quest rewards as "not beating my current purple gear". Now I'm wondering if I've just made a serious mistake -- I don't think I've sold any blues that have def rating, but I know I've dumped a lot of greens.

yep 102.4% its a % so it will never change unless they increase hit chance of bosses which they wont.
But im finding it rather hard to get, i was 3% over at 70 at 75 im 3 % under with all the new gear ive got giving more avoidance than my old gear.

I thought they did away with the whole crushing blow thing? Last I heard was that those dodge/parry/block ratings were good for avoidance and for proc'ing BoSanc, but that there was no longer any set number we had to be going for.

You are right, crushing blows are off the table for anything less than 4 levels above you so they don't exist if you are in the right level instance.
However, 102.4% combined miss/block/parry/dodge is what is affectionately know as Block Capped now.
It effectively means that you will never take an unblocked hit. If you can reach this number with HS up, every attack from the boss will at least have your BV shaved off of the top. Paladins are really the only tanks that can still do this based on the changes to Warriors Shield Block. So it is still something to shoot for.

At Level 80 whats the conversion between defence points and defence val?
(at L70 it used to be 2.4 = 1)
Crushing blows still exist.
They are only done by mobs that are +4 levels higher than you (or more)
Raid bosses are considered to be +3 above max.
eg 83 for 10 and 25 man WotLK raids.
ergo, no bosses crush.
(unless you can get into a raid as level 79)
