Joana speaks the truth. 490 defense is the break point at which you've stacked enough of it to counterbalance a mob's base crit rating. Mobs with abnormal crit ratings (there are some) and players with >5% crit can still crit you. Ask an assassination rogue to try to Cold Blood-Eviscerate you, I guarantee your combat log will show a crit.

25 defense skill reduces your chance to be critted by 1%. So against a level 70 mob, you need 125 higher defense skill than their weapon skill (350). So that would be 375. Since bosses are 3 levels higher than you, you need 125+15 (5 for each mob level), putting it at 490.
To be uncrittable against a 70 rogue with 50% crit chance, you'd need 50*25+350 defense skill, or 1600. Of course, you'd probably be totally unhittable at that point. Your pure avoidance would be >155% before gear or talents, so who knows what that would do to the attack table.

Back in pre-bc, I was a reckoning bomber.
I had a screenshot of my combat log in a duel against one of the best rogues on the server. I've since lost it, but it went something like this...

Rogue takes 18 damage from Thorium Shield Spike
You gain an extra attack through Reckonning

The Attack table illustration at http://www.wowwiki.com/Attack_table seem to suggest this.
Actually Example 1 on that page suggests that shield block can reduce chance to be critically hit.
