DBM
PallyPower
Omen
Quartz
While the rest are nice and handy, I can get by without them.

Would have quite some issues loosing any of my addons I think.. But these should be the most needed ones..
Bartender
BigWigs/DBM
Cowtip
Decursive
Fubar
Grid
Omen
Ora2
Outfitter
Parrot
Pitbull
Quartz
Simpleminimap
Xloot
At some point I grew more addicted to my UI then to WoW itself I think

There are many "must haves", but the eleventh commandment sais:
- X-Perl (Aggro status of raid members, showing debuffs, range check)
- Bartender
- Fubar
- ZOMG Buffs (Better than PP and also reminds me to rebuff RF)
- Omen
- TinyTip (let me see the mobs target without switching target!)
- Tankadin (Only use it for the taunt warnings and the ad tracker, tankpoints is better for the rest, imo)
- Quartz (especially for retribution purposes)

I'll add HolyHope. its a great lil interface for seals and blessings.
beyond that, the standard xperl, omen, etc etc.
I'm still bummed they made grimreaper a separate addon from xperl. I just downloaded it again and will try it when servers come back up. but last time I couldn't get it to work.
never tried tankadin either, guess I'll give it a shot.

Odd...
I have no idea what some of those you folks listed are.
For me:
Omen
Grid
DBM
Pally Power
Itemrack
Everything else is not "must have" and purely preference.
Preference:
Eavesdrop
Recount
ArcHud
Tankadin
MobHealth
CT_Expense
CT_Map

Getting some nice advice for addons to use here, thank you!
I currently use:
X-Perl
TitanPanel
Bagnon (best bag/bank addon ever!)
CTCore, CTMailMod, CTMapMod
Tankadin
DeadlyBossMods
Quartz
Recount
KTM (it sucks, but i havent download anything else yet)
Ghost: Pulse 2 (a GREAT addon! pulses the skill-icon in the middle of the screen when a cooldown finishes)
+ some more, cant remember now

probably Outfitter (borderline, but there are a few cases where I only have a could seconds out of combat to switch gear)
ZA timed event
Hyjal trash waves --> Hyjal boss
How do you switch gear w/o one of these mods is beyond me, also without autoqueuing during combat.

Bartender3
Just for button paging. I like having my bar #1 become bar #3 when I press ctrl. Less clutter than having the normal WoW UI with the extra bars. I have every spell, useable item, and consumable conveniently placed in 2 6x2 bars worth of space.
Everything else is just for show.
You don't NEED Omen. People were downing bosses and maintaining threat before threat meters and damage meters. You don't NEED Pally Power. Pallys were buffing raids constantly, and by that I mean buffing the first people once you finish buffing the last people, before that came out. You don't NEED Tankadin. I can calculate crushability easily just looking at my stats and I personally find the constant "Ardent Defender mitigated blah blah blah" messages, that I cant turn off despite deselecting the "announce AD" box, annoying. Deadly Boss Mods? Guilds were doing raids before this lovely hand holder came out. "Oh such and such a boss is going to do something nifty. Better run away from him. Oh here, you just sit back and let me do it for you. Grats on your new helmet BTW."

The first time threat became important (Vael) was when KTM came out.
