Considering it wasn't mentioned I just figured I'd point out that hard mode is a different ball-game. Worrying about parry-hasting in normal should be negligible, unless you're unsure of your tanks. ^^
I meant tanking him w/ 3 stacks up and him still meleeing, not that the DoT alone was causing AD procs.

In case you missed the 8/9 hotfix...
If I'm reading this correctly...Gormok no longer gets parry-hasted attacks, thus making it perfectly safe to stick all of your tanks right in front of him. (personally, I still plan to run to the melee and beat on some snowbolds to help kill them...)
We just hotfixed the following changes to the Trial of the Grand Crusader (aka Heroic mode).
Northrend Beasts
* Fixed a bug where the flag that prevents a creature from gaining attack speed after a parry was inadvertently left off Gormok the Impaler. This bug is fixed in normal mode as well.
