Having gotten a bunch of upgrades in the last couple days, I suddenly found myself extremely low on hit, after having been capped forever. Replacing http://www.wowhead.com/?item=37723 with http://www.wowhead.com/?item=37166 and replacing +32 AP with Icewalker on my boots brought me back up to 216.

From what I've gathered so far, hit is very good, but not worth gemming for. Is it worth switching from 40 str to 40 hit food? I'm almost always with a dranei as well. It also seems hit is getting a bump in value come patch day. Will gemming / enchanting for hit (or expertise for that matter) then become a priority until capped?

It is generally accepted that anything over 200ish is enough. Hit is very good but like you said it's not worth gemming for. The big problem I found is as you are gearing up you will get stuff with a ton of hit. I was sitting at something like 320 for a while. Once you start getting 25 man stuff it comes down quick. I run at about 240ish now.

TLDR: If you are over 200 stick with str food.

You should never use hit food. If it isn't good enough to gem, it's not good enough to eat.

Now: Str is much better than hit

3.1: Hit and expertise are becoming better than str (according to Rawr atm with 3.1 changes). The value of hit and expertise is different due to SoB damage increasing, and also specials have been discovered to be on a two roll system (hit is rolled then crit). Get 7% hit since you're draenei and 6.5% expertise before stacking strength. It will be worth it to gem hit after patch.

He implied to use hit food over str food if you were below 200 hit.

According to Redcape v2.5:
    Hit rating 213
    Str 166
    Exp rating 154
    Crit rating 81
I'd imagine rawr still puts Str slightly ahead of Expertise, too.

Rawr 2.2.0b5 had these
Hit - 1.98
Expertise - 1.73
Strength - 1.66

But after reading through Redcape's post on EJ it looks like there were seal proc calculation errors in rawr. I couldn't find the correct weightings for 2.2.0b6 though. But yeah, exp cap probably isn't needed but it is much closer than before.

Previously Rawr had definitely been giving me the the Strength > All stat ranking. If these values are more accurate it looks like I'll be having fun times mixing and matching gear pieces. :? It makes me even more annoyed about items that have never dropped like Patchwerk gloves, set gloves, KT cloak...

According to Redcape (who has repeatedly proven himself to be pretty reliable for this sort of thing), 3.1 stat weights are now:

Weapon DPS 617
Hit 213
Str 166
Exp 154
Crit 81
Agi 76
Haste 72
Armor Penetration 72
AP 66
SP 15

He's been updating his thread on EJ so that's a good one to keep an eye on.

Not particularly surprising. Both affect a relatively small subset of our overall damage, and ArP got buffed a lot.

Also, Rawr's model is yielding very similar results. For my current gear, it's

Hit 221
Str 164
Expertise 156
Crit 90
Agi 87
Haste 71
ArPen 71
AP 66
SP 22

Interesting item of note: with these weightings, the TBC head enchant actually beats out the WotLK one *if* you need the hit.
