Professional perks
I've been wondering about the best professions for a tankadin regarding profession-specific BoP or selfbuff perks based on what we currently know; things are obviously going to change over time, but here's what I'm aware of currently:
Skinning: +?? crit, melee damage skill
Mining: +35 stamina, ranged damage skill
Herbalism: Presumably this'll get something (Spelldamage-related, perhaps?)
Jewelcrafting: BoP gem, +45 stamina (+15 compared to equivalent epic gem) - also, fits in any colour socket, so could open up more options for socket bonusses.
Alchemy: BoP pots; if they're just upgraded versions of Mad Alchemist's, probably not of interest.
Blacksmithing: BoP weapons/armour (do we have any details of them?); ability to add a socket (effectively +30 stamina)
Leatherworking: BoP mail/leather armour, presumably not of interest.
Tailoring: BoP cloth armour, presumably not of interest.
Enchanting: Ring enchants (If we don't have precise figures, I'd guess in the ballpark of +10 to all stats)
Inscription: Who knows?
At the moment, mining and blacksmithing look the best to me based on what I'm currently aware of, but my knowledge is probably incomplete and things will change or be revealed over time.

Inscriptions: Get an extra Inscription slot to use, instead of the base 6.
Leatherworking: More Drums
Jewelcrafting: Trinkets, and there is also an +AP Dragon's Eye as well.
Skinning: +25 Crit is the maximum I believe.
Enchanting: Brand new, epic wands, a la Blacksmith weapons.

one can assume that there will be loads of more mats on the AH in wotlk then, since raiding tanks will be miners, healers will be herbalists and dps will be leatherworkers...

Eh, it'll keep me from dropping mining on my Warrior. Not sure what I want his second profession to be yet. We'll see what Engineering has to offer.

well, not early on ofc, but sooner or later there will be something that comes along to replace that item...
+35 stamina stays with you through out the progression in the raids

I know i'm a happy engineer/enchanter and don' think i'll drop either!
And my alt is herbalist skinner o.o
It's more of a local thing. ATM herbalism is SO FUCKIN OP for making money here.
Actually in this server primal earth > primal water, there are 0 herbs at the AH at any time of the day, and loads of ore.
Like usual, go by your needs. This change is only to keep stuff like "Gonna pick this profession so I can have +3 stam than the others!" from happening.

I'm hoping for some information on what kind of craftable epics the professions will be getting.
I hope I won't have to take up blacksmithing for some kind of major advantage - Blizzard did admit that they learnt that massive BoP profession advantages were retarded and won't be doing them again. Time will tell I guess.
I just really quite enjoy being an alch/herbie at the moment since Ironshields (Soon to be Indestructible potions, I love that name.) and mana pots are quite useful to be self-sufficient in.

working on getting my rogue an epic flyer so he can herb faster...
alchemy is quite useful, yes, love having access to it!

When did blizzard say that about BoP profession items? I do hope it's true, since I'd hate to drop enchanting because some other profession would have something I'd absolutely have to have or suffer gear penalty until the very late end game raiding.
I'm currenly satisfied with smithing and enchanting. But it does look like enchanting is become less and less useful as other professions gain perks that highly surpass the probable +6 stats to ring enchant.
