What are must have's to work on for WotLK
For us that aren;t raiding what do you think are "Must have's" based on the info we have now about wrath that will make things easier?
Auto blocker? a warrior tank wep with deathfrost? Lots of 15 stam gems stockpiled for new gear? any trinkets that are a must? any weps that are a must?
Just looking for somthing to pass the time

I don't see why you'd want a warrior weapon with DF since we get our own thunder clap
The only thing you'd want to level a lil quicker, is a regular tank weapon. Sun Eater, King Defender, Unbreakable Will, Brutalizer, Dragonscale Entrusted Sword, something like that.

If you don't raid, the best thing you can do to prepare for WotLK is porbably stockpile cash, and once more info on Profs is available, make sure you have your 2 profs of choice at 300 with the mats ready to get your first few points beyond that.

Regarding leveling and assuming a Prot spec, I like that we've got 2 options now:
1. Usual Ret Aura/Holy Shield/Consecrate AoE grinding
2. 2H Reckoning/SoB/HotR face smashing
I expect that both will be useful for soloing
edit -- just realized HotR is 1H-only. Lame.

I imagine the new green gems in Wrath will be somewhere around +15, with the blues being more, so I wouldn't worry about it TOO much

Well, gear's getting replaced, so just get a decent set and you'll replace it all in a few levels anyway. Prot or Ret will both have decent leveling paths (AE vs single target) but Ret will probably do quests faster. Just get more non-SD gear for the talent changes, e.g. a tanking weapon like Dorvan said.
Remember that badges and gold will be worth less in the expansion. You probably want to spend badges, but saving up on cash isn't a bad idea. Prices will be crazy for the first few weeks.
I can't think of anything that's a must-have, except maybe the Figurine of the Colossus. If you're doing AE farming that will continue to have use. Autoblocker might be nice, but there's also a similar item from the Brewfest boss.

are there any trinkets that you can see will maybe carry over to 80? (like Styleen's impending scarab was)
