We live in a society where people born on third base constantly try to steal second, yet we expect people born with two strikes against them to hit a homerun on the first pitch.

Because it allows me to troll and get three day forum bans.

With the removal of max level normal mode dungeons MoP could be:
Green: Quests/General crafted
Blue: Normal mode dungeons/quest chain ends/Multi skill up crafted
Purple: Heroics/Raids/Unique material crafted

Doesn't that still leave us with nothing but epics at 90?

Yes, but I have zero problem with that and it still meets your criteria about color corresponding to source ;p

Only epics at 90 would only work if they don't use blue shards in any enchants, or if they start the expansion with a crystal->shard conversion. I don't think they would want to do either of those, though.

Remember that they won't have level 90 regular dungeons, only heroics, so perhaps whether heroics provide blues or purples may rest on their difficulty level.
Personally, I wouldn't mind the blue shards being rare once everyone levels, it will help the crafters (and farmers).

nah, just don't wait until the final patch to introduce a Crystal exploding process.
Should be there from the start.
Shatter Crystal: Creates two shards.
Deconstruct Crystal: Creates dust or essences.

So long as we don't end up with getting about 10 essences for every 100 dusts when disenchanting greens like in pretty much every version of WoW up until now; while requiring equal amounts of each for enchants.

Wasn't essence from weapons and dust from armours?
But yeah, that would indeed cause to be imbalanced as you have only 3 weapons slots...

There are many more green armor pieces than there are green weapons, causing an unnecessary imbalance in the amount of available materials.

I believe you can occasionally get essences from armor too?

Occasionaly. When I disench my Alacite necklaces I tend to get a few essence as well.
