VII was good, no doubt. But IV just told a better story in my opinion.
Part of what stops me from liking VII more is I hate how nobody was differentiatied. I'm fine with customizability, but the only difference between characters was stat growth and limit breaks (which all just do damage for the most part.) Booorrrrriinnnng. Although how cool the materia system was makes up for some of that.

FFVI:
SNES - Too short. Kefka, though great, was a bitch in the final fight. Seriously? Only 60k hp? FUCK! Some characters weren't developed eg Shadow, Relm, Strago - Not a lot of people know the connection.
GBA - Sound blows.
PSone - wtfsound? CGI was equally painful to watch (FFIV).

The DS version is indeed hard and I am loving every second
the PS1 version was my absolute favorite. I never had loading issues in that. You may be remembering FF6, FF5, and Chrono Trigger, all of which had shitty loading issues in their PS1 incarnations.
I couldn't play the GBA one due to the character portraits looking like ass.

It might've just been my Psone.
Looking back, the last time I played FFIV was on my PS3 and there were loading issues but not many. Just saving, loading and an occasional battle.

I oppose all of the ff4 remakes because all the new portraits of Cecil make him look like an emaciated woman.
Honestly though, play it on snes emulator. Hold down the speed key to blaze through leveling up and autoattacking monsters (there is lots of this.)
The GBA portrait - definitely, that was horrible and I couldn't play it.
The DS artwork is <3
Also despite me hating his guts, I have to say I enjoy the Nomura-ified Cecil art for Dissidia

I think an improved difficulty is great but when I have over 700 hp and they're still taking chunks out of my life? Nah.

Aerith - OVERRATED DEATH SCENE.
Sephiroth - WTF EMO.
The story was weak. There were some amazing parts (Hojo, Vincent connection), Nibelheim (Cloud, Tifa), and some neat character development but overall, not a particularly memorable story.
Music - Fascinating but strange. Nobuo went techno/industry using all electronic sounds. The final Jenova fight is the only truly epic piece. However the composer later redeems himself with the Orchestral One Winged Angel and much later, FFVII: Advent Children, which I praise as one of his best works to date.
Graphics - Didn't like how you had fat heads running around and then lifelike characters in battle.
Best parts of the game?
Watching KOTR for the first time.
Watching all three Bahamut summons for the first time.
Omnislash is still badass.
The battle with Emerald Weapon and Junon. Or was it Diamond? I forget.

Despite the annoyance I feel now with FF2 on the DS (as it's a New Game to me), I really like waht they've done in general. FF1 was very well remade. Overall, it fits the system well.
I'll need to get FF6 for that; last time I played was on an emulator and I never got past about 10 minutes after the world-changing-event. Though ... Celes' opera was mindblowing.

Junction? Hit and miss. Liked being able to draw it out of creatures and the land. But seriously? Boring at times.
Cool summon effects but old after 7. Is there a fastforward button?
Parts of the game didn't make sense to me. Dinosaurs near Balamb garden? Cities and cars but the land was so sparse looking?
Strange way to gain money.
Boss fights were unbalanced.
The good (My 2nd favorite PSone game)
The music was just mindblowing. Epic finale.
A lot of depth with the characters. They weren't just pretty. Rinoa came off as helpless a lot but was offset by Seifer's OGness, Raijin and Fujin's comedy and Squall's soul searching.
The story was just epic in quality and substance.
